I absolutely never trust factory edges. They are set for production speed, not accuracy, and that often leaves bevels uneven or misaligned right out of the box. First: not being aggressive enough to actually re establish a cutting edge. If you never reach the apex, nothing after that matters. Second: inconsistent angles. Changing angles mid pass rounds the edge instead of refining it, no matter how good the stone or belt is. Third: over polishing. At some point the edge is done. Continuing past that doesn’t make it sharper, it just makes you feel busy. Good sharpening is knowing when to push harder, when to stay steady, and when to put the knife down. |
